Organic Raw Carrot Cake Bliss Balls

Have you ever wondered what to do with your leftover nut mylk meal? Well one of my favourite things to do is to turn it into is a bliss ball recipe! Grab yourself a bottle of the “Peter Rabbit” Carrot Cashew Nut Mylk, make a batch of these, and you will be one happy bunny!

Fiber ~ Omega 3’s ~ Vitamin A ~ Potassium 


Ingredients:

  • 1 cup of leftover nut meal from making mylk (make sure it’s well squeezed with little moisture)
  • 1 cup of raw nuts (walnuts, pecans, almonds or cashews all work nicely)
  • 1 cup of carrots, finely shredded
  • 1 tsp. of fresh ginger, grated on microplane
  • 8 medijool dates, pitted
  • ¼ cup of hemp hearts
  • 3 tbsp. of pure maple syrup (or raw honey for vegan version)
  • 1 tsp. of pure vanilla extract (look for non-alcoholic)
  • 1 ½ heaping tsp. of cinnamon
  • ½ heaping tsp. of nutmeg
  • ½ cup of unsweetened shredded coconut (for rolling)
  • ½ cup of raisins
  • 1 tsp. of orange zest

Method: 

1. In a large “S-Blade” food processor, add all ingredients (except for the coconut), and pulse until the mixture turns into a dough-like consistency.

* You want the dates to be completely blended throughout

2. Using a spatula, transfer mixture into a large mixing bowl. Stir in raisins.

3. Refrigerate the mixture for a bit so it can firm up. This makes rolling less sticky!

4. Once chilled, roll small golf ball size balls between your hands, and then in shredded coconut.

5. Line in an airtight container and store in the freezer for when you need a sweet, healthy treat!
